The Art of Pomegranate Wine Fermentation

Unlike traditional grape wines, St. Kathryn Cellars Pomegranate Wine begins with 100% pomegranate juice. The pomegranate juice arrives frozen, like many of our fruit juices, so the first step before we can start the fermentation process is to allow it to thaw. 

Before yeast is introduced and fermentation begins, the juice must be sweetened to the optimal level. This step is crucial because it determines the wine’s final alcohol content. Since yeast converts sugar into alcohol, it’s important to ensure there’s enough sugar in the pomegranate juice for the yeast to create the right amount of alcohol and transform the juice into wine. There are naturally occurring sugars in pomegranate juice, but not quite enough to get what we need. Our winemaking team calculates the amount of additional sugar needed to achieve a final ABV (alcohol by volume) of about 12% and adds it into the juice. 

After this initial sweetening step, the fermentation process can begin. 

To kick things off, the sweetened pomegranate juice is introduced to specially selected wine yeast strains. All the sugars in the pomegranate juice provide the yeast with the fuel it needs to ferment effectively, converting that sugar into alcohol while preserving the wine’s clean, fruit-forward character. Over the next several weeks, the yeast is hard at work and our winemaking team monitors the juice to see when fermentation is complete. The result is a pomegranate wine with a clean, crisp finish that captures the essence of pomegranate fruit.

Once fermentation is complete, it’s time to back-sweeten the wine to achieve its signature medium sweetness. By now, nearly all the sugar in the pomegranate wine has been converted into alcohol by the yeast, and the wine is very dry. 

Back-sweetening means simply adding in additional sugar after fermentation, or going “back” and sweetening. By adding just the right amount of sweetness back into the wine, we enhance the natural flavors of the pomegranate juice while maintaining the desired level of alcohol. The final product is tart, fresh, and irresistibly smooth pomegranate wine, offering a drinking experience that’s both complex and approachable.
