Palisade peach inspired muffins just made brunch a whole lot more fun!
Ingredients
  • 3 Eggs
  • 1/4 cup Oil
  • 1/2 cup St. Kathryn Cellars Peach Wine
  • 1 cup Sugar
  • 2 cups Chopped Peaches
  • 2 tsps Vanilla
  • 3 cups All Purpose Flour
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 2 Taps Cinnamon
  • 1/2 tsp Baking Powder
  • 1 cup Chopped Nuts
Directions

Beat eggs. Add oil, peach wine, sugar, and mix well. Add peaches and vanilla. Stir in dry ingredients and nuts until blended, do not over beat. Pour batter into greased muffin tins and bake at 375 degrees, 15-20 minutes. Batter can also be used for quick bread as well. Pour batter into 2 greased bread pans. Bake at 325 degrees for one hour. Enjoy!
